At the end of our trip we stopped for one night in Bagenalstown, County Carlow, to visit Mim Scala and his wife Janie, and their son Freddy who is a very accomplished equestrian and trainer. There's a photo of all the ribbons he's won in various competitions. Mim used to be Chris's manager in the music business a long time ago. They live in a beautiful country house where they have horses and dogs and chickens. Mim cooked a delicious Chicken dish from Morocco in the tajine clay pot. Freddy happened to be competing the day we arrived and won in every category he entered!
